The exceptional environment enjoys a unique balance of fresh, brackish and marine waters; creating a rich ecosystem fed by the mineral-rich waters coming from the rivers and most of all, the pureness of the Mediterranean Sea currents. Our oysters grow in optimal conditions which give them a distinct balanced taste of the open sea with a subtle sweetness. The freshness of the water, the environment and the sun lights of the Mediterranean climate give to our oysters the mantel of a shiny golden hue while the inside of the shell is a bright nacre-white color.
